Shrimp Egg Foo Young



A classic Chinese-American dish, shrimp egg foo young combines tender shrimp with a medley of vegetables bound together with a flavorful sauce. It's a tasty and filling dish that's simple to make at home.

Ingredients:

  • 1/2 lb shrimp, peeled and deveined
  • 4 eggs, beaten
  • 1/2 cup bean sprouts
  • 1/4 cup chopped green onions
  • 1/4 cup chopped mushrooms
  • 1/4 cup chopped bell peppers
  • 1/4 cup chopped onions
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce
  • 1/4 cup chicken broth
  • 1 tsp cornstarch
  • 1/2 tsp sugar
  • 1/2 tsp sesame oil
  • 2 tbsp vegetable oil for frying
  • Salt and pepper to taste

Instructions:

In a small bowl, mix soy sauce, chicken broth, cornstarch, sugar, and sesame oil to make the sauce

Set aside

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat

Add shrimp and stir-fry for 2-3 minutes until they turn pink

Remove shrimp from the skillet and set aside

In the same skillet, add the remaining tablespoon of vegetable oil

Add garlic, onions, mushrooms, and bell peppers

Stir-fry for 2-3 minutes until the vegetables are tender

Add bean sprouts and green onions to the skillet and stir-fry for another 1-2 minutes

Pour the beaten eggs over the vegetable mixture in the skillet

Cook, stirring gently, until the eggs are set and cooked through

Return the cooked shrimp to the skillet and pour the prepared sauce over the entire mixture

Stir-fry for an additional 2-3 minutes until everything is heated through and the sauce has thickened

Season with salt and pepper to taste
