Raisin Date Bread Pudding Parfait



Enjoy the delicious combination of raisin date bread pudding and fluffy whipped cream in this beautiful parfait. This dessert is comforting because of the cinnamon and nutmeg that make it warm. It's a great treat for any event.

Ingredients:

  • 4 cups of cubed raisin date bread
  • 1 cup of raisins
  • 4 large eggs
  • 2 cups of whole milk
  • 1 cup of heavy cream
  • 1 cup of granulated sugar
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of ground cinnamon
  • 1/4 teaspoon of nutmeg
  • Pinch of salt
  • Whipped cream for topping
  • Chopped nuts for garnish optional

Instructions:

Preheat the oven to 350F 175C

In a large bowl, combine cubed raisin date bread and raisins

In another bowl, whisk together eggs, whole milk, heavy cream, granulated sugar, vanilla extract, ground cinnamon, nutmeg, and a pinch of salt

Pour the egg mixture over the bread and raisins, ensuring all pieces are coated

Let it sit for 15 minutes, allowing the bread to absorb the liquid

Transfer the mixture to a greased baking dish and bake for 40-45 minutes or until the top is golden and the center is set

Remove from the oven and let it cool slightly before cutting into parfait-sized portions

In serving glasses, layer the bread pudding with whipped cream, repeating until the glass is filled

Top each parfait with a dollop of whipped cream and garnish with chopped nuts if desired

Serve immediately and enjoy!
